SŌEN -CONRAD NAGOYA-

Aichi Prefecture has long stood as one of Japan’s great centers of manufacturing and craftsmanship. Its industrial culture emerged from the region’s historic waterways-most notably the Nakagawa Canal and Horikawa River-which once served as vital arteries for transporting goods, people, and ideas. As artisans moved along these routes, techniques in woodworking, textiles, ceramics, and other crafts were exchanged and refined, forming a cultural identity rooted in making. Over generations, this spirit of ingenuity became a defining element of Nagoya’s urban character. Set within the heart of Sakae, the Japanese dining venues at Conrad Nagoya reinterpret these regional narratives through a contemporary lens. Framed by sweeping views from the 40th floor, the design draws inspiration from both the enduring legacy of craftsmanship and the waterborne culture that shaped it, creating an immersive dining destination unlike any other in the city. By contrasting the experiences of sushi and teppan dining through the themes of stillness and movement, the project offers guests a layered journey of discovery.

In contrast, teppan dining SŌEN celebrates dynamism and interaction. Its central teppan counter with a dramatic installation inspired by layered textiles and the flowing geometry of historic canals, anchors the space as it becomes a stage for culinary performance, where the chef’s artistry unfolds against panoramic views of the city.  

A variety of seating environments—including semi‑private counter seats framed by timber lattice screens, intimate booths, and two exclusive private dining rooms each equipped with its own teppan grill—allow guests to engage with the restaurant in multiple social and experiential modes. This layered composition reinforces the venue’s identity as a place of vitality and shared experience.

Together, SŌRYU and SŌEN blend tradition and modernity, serenity and energy, craftsmanship and performance. Rooted in the cultural heritage of Aichi yet elevated through contemporary design, the Japanese dining venues at Conrad Nagoya are envisioned as a new destination dining experience—one that honors the past while offering guests an unforgettable encounter with the present.
